Swordfish has a firm, succulent, meaty texture. It is best cooked char-grilled, pan-fried or barbecued. Swordfish can stand up to some powerful flavours such as chilli, garlic, ginger and soy. These loins are skinless and are vacuum packed to retain freshness.
